  • 4 large ripe avocados, halved and pitted
  • 1 lb ground chicken
  • 1/2 cup chopped red onion
  • 1/2 cup chopped red bell pepper

  • 1/4 cup lime juice, freshly squeezed

  • 2 cups shredded lettuce

Instructions

  4. Stuff each avocado boat with the spicy chicken mixture, then top with shredded Monterey Jack cheese.
  5. Broil or grill the stuffed avocado boats for 3 4 minutes until the cheese is melted and bubbly.
  6. Serve on a bed of crispy lettuce and drizzle with the creamy lime sauce. Garnish with the remaining chopped cilantro.
