Ingredients
- 1/2 cup chia seeds
- 1 can (13.5 oz) full
- fat coconut milk
- 1 tbsp honey or other keto
- friendly sweetener
- 1 tsp lime zest
- 2 tbsp fresh lime juice
- 1/4 cup chopped almonds
- 1/4 cup chopped fresh mint leaves
- Optional: berries for garnish
Instructions
- In a large bowl, combine chia seeds and coconut milk. Stir well to prevent clumping.
- Cover and refrigerate for at least 3 hours or overnight, until the chia seeds have absorbed the liquid and formed a pudding like consistency.
- Before serving, gently mix in honey (or keto sweetener), lime zest, and fresh lime juice. Adjust sweetness as desired.
- Top with chopped almonds and mint leaves. Optionally garnish with berries for added color and flavor.
