  • 1/2 cup kimchi

Instructions

  1. In a large bowl, combine gochujang, soy sauce, sugar, garlic, ginger, sesame oil, black pepper, and a pinch of salt. Mix well.
  2. Add the thinly sliced beef to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat your grill or grill pan over medium high heat. Grill the marinated beef for 1 2 minutes per side, or until desired doneness is reached. Remove from heat and let rest for a few minutes.
  4. Assemble tacos: Warm tortillas or shells on the grill for about 30 seconds on each side. Layer grilled beef, shredded cabbage, carrots, cucumber slices, avocado, green onions, pickled radishes, kimchi, and a sprinkle of cilantro leaves. Sprinkle with sesame seeds and add a final touch of salt and pepper.
  5. Serve immediately with a side of soy sauce or your favorite dipping sauce.
