Ingredients

  • 1 lb ground beef (90% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup walnuts, finely chopped
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp allspice
  • 1/4 tsp cinnamon
  • 2 tbsp olive oil
  • Lemon
  • Garlic Tahini Sauce:
  • 1/4 cup tahini paste
  • 3 tbsp lemon juice, freshly squeezed
  • 2 cloves garlic, minced
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, onion, garlic, parsley, walnuts, tomato paste, cumin, paprika, salt, black pepper, allspice, and cinnamon. Mix well until all ingredients are evenly distributed.
  2. Form the mixture into 8 10 oval patties, about 1 inch thick.
  3. In a large skillet, heat olive oil over medium high heat. Add kafta patties and cook for 4 5 minutes per side or until browned and cooked through. Remove from pan and set aside.
  4. For the tahini sauce, in a small bowl whisk together tahini paste, lemon juice, garlic, water, salt, and pepper until smooth and creamy. Adjust consistency by adding more water if needed.
  5. Drizzle lemon garlic tahini sauce over cooked kafta patties and serve immediately.

Chef’s Insight

The key to a flavorful kafta lies in the balance of spices. Experiment with different proportions to achieve your preferred taste.
