  • 1 lb ground beef
  • 1 small onion, finely chopped

  • 1 tbsp olive oil

  • 1/4 tsp cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Wash zucchinis, then carefully slice them in half lengthwise. Scoop out the center flesh, leaving about 1/4 inch thickness on all sides to create a boat. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  4. Add garlic and continue to cook for another minute.
  5. Add ground beef, breaking it up with a spatula, and cook until browned. Drain any excess fat.
  6. Season the meat mixture with salt, black pepper, paprika, cumin, coriander, and cinnamon. Stir well to combine and cook for 2 more minutes. Remove from heat.
  7. Stuff each zucchini boat with the spiced ground beef mixture, leaving a small gap at the top. Place stuffed zucchinis on the prepared baking sheet.
