Ingredients
- 1 cup quality dark chocolate, finely chopped
- 3 cups high
- quality tequila
- 2 cups milk
- 4 cups chilled club soda
- 1 cup heavy cream
- 1/4 cup confectioners' sugar
- A pinch of sea salt
- Crushed ice
- Fresh raspberries and lime wedges, for garnish
Instructions
- In a heatproof bowl set over a double boiler, gently melt the dark chocolate until smooth and velvety. Remove from heat and let it cool to room temperature.
- In a large pitcher, combine tequila and milk, stirring well to blend them together.
- In another bowl, whisk heavy cream with confectioners' sugar and a pinch of sea salt until stiff peaks form.
- To serve the float, fill each glass three quarters full with crushed ice. Pour in the chocolate infused tequila mixture, followed by a generous scoop of whipped cream. Top off with a splash of chilled club soda and garnish with fresh raspberries and lime wedges.
