Ingredients

  • 2 cups (480ml) Kefir, gluten
  • free
  • 1/2 cup (100g) Granulated sugar
  • 1 tsp (5g) Unflavored gelatin powder
  • 1 Vanilla bean, split and seeds scraped
  • 1 1/2 cups (200g) Fresh raspberries
  • 3 tbsp (45ml) Water
  • 2 tbsp (30ml) Lemon juice
  • 1/2 cup (60g) Crushed almonds, for garnish
  • Zest of 1 Orange, for garnish

Instructions

  1. In a medium saucepan, combine Kefir and sugar. Heat over low heat until the sugar is dissolved, stirring occasionally. Remove from heat and whisk in gelatin, then add vanilla bean seeds. Pour into 2 individual dessert cups and refrigerate for at least 4 hours or until set.
  2. In a separate saucepan, combine raspberries, water, and lemon juice. Cook over low heat for about 10 minutes, mashing the berries with a fork as they soften. Strain the mixture through a fine mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
  3. To serve, drizzle the raspberry coulis over the set Kefir Panna Cotta and sprinkle with crushed almonds and orange zest.
