Ingredients

  • 1 cup milk powder
  • 2 tablespoons ghee, melted
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron strands, crushed
  • 1/4 teaspoon pistachio extract (optional)
  • 1/3 cup all-purpose flour (gluten-free option available)
  • 2 tablespoons cold milk
  • 1 and 1/2 cups sugar
  • 1 cup water
  • 1/2 teaspoon rose water
  • Crushed pistachios, for garnish

Instructions

    In a large bowl, mix the milk powder, melted ghee, cardamom powder, saffron, and pistachio extract (if using). Add flour and cold milk, mixing until a smooth dough forms. Cover and refrigerate for 30 minutes.

    In a medium saucepan, combine sugar, water, and rose water. Bring to a boil over medium heat, then reduce heat to low and simmer until the sugar is fully dissolved.

    Remove the dough from the refrigerator and shape into small, round balls. Gently drop them into the hot sugar syrup. Cover and cook on low heat for 20 minutes or until the milk balls have doubled in size and are cooked through.

    Carefully remove the Gulab Jamun from the syrup and place on a serving platter. Drizzle the remaining syrup over the top, then garnish with crushed pistachios. Serve warm.

Chef's Notes

For a dairy-free version, you can substitute coconut milk powder for the milk powder.
