  • 1 cup non
  • dairy milk
  • 2 tsp apple cider vinegar
  • 1 cup self
  • raising flour
  • 1/4 cup ground almonds
  • 3/4 cup white sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp coconut oil, melted
  • 2 tbsp golden syrup or maple syrup
  • 1 tsp vanilla extract
  • For the Caramel Sauce:
  • 1 cup brown sugar
  • 1/2 cup non
  • dairy milk
  • 4 tbsp coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9 inch round baking dish.
  2. In a small bowl, mix together non dairy milk and apple cider vinegar set aside for a few minutes to curdle.
  3. In a large mixing bowl, combine flour, ground almonds, white sugar, cinnamon, and salt. Add the curdled milk mixture, melted coconut oil, golden syrup or maple syrup, and vanilla extract. Mix until well combined.
  4. Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 35 40 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the pudding bakes, prepare the caramel sauce by combining brown sugar, non dairy milk, coconut oil, vanilla extract, and a pinch of salt in a small saucepan. Heat over medium heat, whisking occasionally, until the sauce thickens and becomes smooth. Set aside to cool slightly.
  6. Once the pudding is baked, remove from the oven and immediately pour the warm caramel sauce evenly over the top of the pudding. Allow to cool for a few minutes before serving.
