Instructions

  1. a. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, coconut milk, and water. Add the lemongrass bundle and bring to a boil. Reduce heat to low, cover, and simmer for 18 20 minutes or until the rice is cooked through and all liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Discard the lemongrass bundle. b. In a large frying pan or wok, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides. Stir in the curry powder, season with salt and pepper to taste, and continue cooking for another 2 3 minutes, or until the chicken is cooked through. Remove from heat and set aside. c. Bring a pot of water to a gentle simmer. Crack each egg into a separate small bowl, then carefully slip the bowls into the simmering water. Poach the eggs for 3 4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and keep warm in a bowl of lightly salted water. d. To serve, divide the coconut lemongrass rice among six bowls. Top each bowl with a portion of the chicken satay, bean sprouts, and poached eggs. Garnish with roasted peanuts and cilantro leaves.
