  • 4 large ripe mangoes, peeled and cut into chunks
  • 1 can full
  • fat coconut milk (13.5 oz / 400 ml)
  • 1/2 cup raw honey
  • 1 tbsp freshly grated ginger
  • Pinch of sea salt
  • Optional: Paleo graham crackers, for dipping

Instructions

  1. In a high speed blender or food processor, blend the mango chunks until smooth. Add the coconut milk, raw honey, grated ginger, and sea salt to the blender. Blend again until fully combined and the mixture has a creamy consistency. Taste and adjust sweetness if needed by adding more raw honey. Pour the mango mixture into popsicle molds, filling each mold almost to the top. Insert popsicle sticks and freeze for at least 4 hours or until solid.
