  • 16 sheets phyllo dough (vegan)
  • 2 cups walnuts, finely chopped
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 3 tbsp vegan butter, melted
  • 1/4 cup honey (or agave syrup for a strictly vegan option)
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the walnuts, sugar, cinnamon, cloves, and a pinch of salt until well combined. Set aside.
  3. Unroll the phyllo dough sheets on a clean surface or between two sheets of parchment paper. Keep them covered with a damp cloth to prevent drying out.
  4. Lay one sheet of phyllo dough flat on a baking tray, brush lightly with melted vegan butter, and sprinkle some of the walnut mixture evenly over it.
  5. Repeat layering and brushing with butter until all 16 sheets are used up. Be gentle when handling the phyllo layers to avoid breaking them.
  6. Using a sharp knife, cut the layered dough into 6 equal rolls. Place each roll on the baking tray, ensuring there's enough space between them for even cooking.
  7. Bake in the preheated oven for about 20 25 minutes or until golden brown.
  8. While the Baklava Rolls are baking, prepare the syrup by combining water, honey (or agave syrup), and vanilla extract in a saucepan over medium heat. Stir until fully dissolved and slightly thickened. Remove from heat and set aside.
  9. As soon as the rolls come out of the oven, immediately pour the warm syrup generously over them, allowing it to seep into every layer.
  10. Let the Baklava Rolls cool for 5 10 minutes before serving. Enjoy!
