Ingredients
- 1/2 cup cooked quinoa
- 3 oz grilled chicken breast, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 2 cups mixed greens
- 1 tbsp lemon juice
- 1 tsp olive oil
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red bell pepper, kalamata olives, and crumbled feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
- Pour the dressing over the salad and toss gently until well combined.
- Serve on top of a bed of mixed greens.
