Ingredients

  • 6 large bell peppers (assorted colors)
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh basil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. a. Preheat oven to 350°F (175°C). b. Cut the tops off of the bell peppers and remove seeds and membranes. c. In a large bowl, combine feta cheese, basil, cherry tomatoes, cucumber, olives, red onion, garlic, salt, pepper, and olive oil. Mix well. d. Stuff each bell pepper with the mixture, filling to the top. e. Place stuffed peppers in a baking dish, add 1 inch of water to the bottom of the dish, and cover with aluminum foil. f. Bake for 35 40 minutes or until the peppers are tender. Remove from oven and let cool slightly before serving.
