Ingredients
- 8 gluten
- free pitas (preferably homemade)
- 2 cups cherry tomatoes, halved
- 1 large cucumber, thinly sliced
- 1 medium red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1/4 cup fresh dill, finely chopped
- 1/4 cup extra virgin olive oil
- 3 tablespoons lemon juice
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
Instructions
- a. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and crumbled feta cheese. Toss gently to mix. b. Add fresh dill, olive oil, lemon juice, ground cumin, salt, and black pepper. Gently toss again until well combined. c. Place 2 gluten free pitas on each serving plate, then top with the tomato mixture. Serve immediately.
