Instructions

  1. Preheat your oven to 350°F (180°C). Unfold the phyllo dough sheets and place them on a clean surface. Cover with a damp cloth to prevent drying out.
  2. In a small bowl, mix together the chopped walnuts and almonds, sugar, cinnamon, lemon juice, and vanilla extract (if using) until well combined.
  3. Lay a phyllo sheet on a baking tray and brush lightly with melted vegan butter. Top with another phyllo sheet, repeat the brushing process, and continue layering until you have used half of the phyllo sheets.
  4. Sprinkle an even layer of the nut mixture over the top layer of phyllo dough, leaving a 1 inch border around the edges.
  5. Repeat steps 3 and 4 with the remaining phyllo sheets, ending with a layer of phyllo dough on top.
  6. Using a sharp knife, cut the baklava into desired shapes or squares. Drizzle any remaining melted butter over the top.
  7. Bake in the preheated oven for 25 30 minutes, or until golden brown and crispy.
  8. While the baklava is baking, heat the orange blossom syrup in a saucepan over medium heat. Bring to a simmer and cook for about 5 minutes. Remove from heat and let cool slightly.
  9. Once the baklava is done, remove it from the oven and immediately pour the warm orange blossom syrup evenly over the top. Let it soak in for at least 2 hours or overnight for best results.
