In a bowl, mix together the cherry tomatoes, cucumber, red onion, feta cheese, parsley, dill, lemon zest, lemon juice, olive oil, salt, and pepper. Remove the zucchini boats from the oven and fill them with the vegetable mixture. Serve immediately.
