  • 1 box cornbread mix
  • 1 cup milk
  • 2 eggs
  • 1/3 cup vegetable oil

Instructions

  1. Combine barbecue sauce, honey, apple cider vinegar, brown sugar, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper in a large bowl. Stir until well combined. Set aside.
  2. Preheat your grill to medium high heat (around 375°F / 190°C). If you don't have a grill, you can also use a stovetop griddle or an oven broiler.
  3. Season the chicken breasts with salt and black pepper on both sides.
  4. Place the chicken breasts on the preheated grill and cook for 10 minutes per side, or until fully cooked through (internal temperature of 165°F / 74°C). Brush the barbecue glaze onto the chicken during the last 5 minutes of cooking to create a lustrous, sticky finish.
  5. While the chicken is cooking, prepare the cornbread according to the package instructions. Mix the dry cornbread mix with milk, eggs, and vegetable oil in a large bowl until well combined. Pour the batter into a greased baking dish and bake at 400°F / 205°C for about 20 25 minutes or until a toothpick inserted in the center comes out clean.
