1 lb pork shoulder, cut into 1
inch cubes 2 cups hickory wood chips, soaked in water for 30 minutes 1 cup your favorite BBQ sauce (Memphis
style preferred) 8 small corn tortillas 1 cup coleslaw 1 cup pickles 1/4 cup chopped cilantro 1 lime, cut into wedges
Instructions
Preheat your grill or smoker to 350°F (175°C) and prepare the wood chips for indirect cooking.
In a large bowl, combine pork cubes and BBQ sauce. Mix well and let marinate for 15 minutes.
Place soaked wood chips on hot grill and add pork cubes. Grill with the lid closed until the internal temperature of the pork reaches 165°F (74°C), about 20 25 minutes. Turn the meat occasionally to ensure even cooking.
Remove the pork from the grill and let it rest for 5 minutes. Chop or shred the cooked pork into bite sized pieces.
