Instructions

  1. Preheat a deep fryer to 350°F (175°C).
  2. In a large bowl, whisk together the flour, salt, 1/2 teaspoon cinnamon, baking powder, and 1/4 cup cinnamon sugar mixture.
  3. Add almond milk, melted butter, and vanilla extract to the dry ingredients. Mix until just combined, then pour batter into a piping bag.
  4. Pipe small bite sized churro bites onto parchment paper, spacing them apart for easy frying.
  5. Fry the churro bites in hot oil for 2 3 minutes or until golden brown and puffed up. Remove with a slotted spoon and place on a wire rack to drain.
  6. Melt the chocolate chips in a double boiler or microwave, then dip each fried churro bite into the melted chocolate, coating completely.
  7. Roll the dipped bites in the remaining cinnamon sugar mixture and place them back on the wire rack to set.
