Dairy (Cotija cheese) - Eggs (Mayonnaise, if using egg-based)
Ingredients
4 fresh ears of corn, husked and silks removed
1 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
Salt and pepper, to taste
4 wooden skewers
1/2 cup mayonnaise
1 tablespoon sriracha sauce
Zest and juice of 1 lime
1 tablespoon chopped fresh cilantro, for garnish
Instructions
Preheat your grill or stovetop grill pan to medium high heat.
In a small bowl, mix together the mayonnaise, sriracha sauce, lime zest and juice, and 1 tablespoon of chopped cilantro. Set aside.
In another small bowl, combine the cotija cheese, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix well.
Thread each ear of corn onto a wooden skewer, piercing through the base and allowing some corn to hang off the end.
Grill the corn skewers for 10 12 minutes, turning occasionally, until the corn is tender and slightly charred. Remove from heat and let cool for a minute.
Sprinkle each corn skewer generously with the cheese mixture, then drizzle with the spicy mayo.
Garnish with additional cilantro and serve immediately.
