Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tbsp olive oil
  • 1 lb spaghetti
  • 4 cloves garlic
  • 1 bunch fresh basil
  • 1 bunch fresh parsley
  • 1 head broccoli
  • Salt and pepper, to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a shallow bowl, whisk together the egg and a splash of water. In another shallow dish, combine Parmesan cheese and breadcrumbs. Season chicken breasts with salt and pepper to taste. Dip each breast in the egg mixture, then coat evenly with the Parmesan breadcrumb mixture. Place chicken in prepared baking dish. Repeat with remaining breasts.
  3. Drizzle chicken with olive oil and bake for 25 minutes or until fully cooked through. Remove from oven and let rest for 5 minutes.
  4. While chicken is resting, bring a large pot of salted water to a boil. Cook spaghetti according to package instructions. Drain and toss with garlic, basil, parsley, and a splash of olive oil. Season with salt and pepper to taste.
  5. Steam broccoli until tender crisp, about 4 5 minutes. Season with salt and crushed red pepper flakes if desired.
  6. Slice chicken breasts and serve atop spaghetti. Surround with steamed broccoli. Enjoy!
