Instructions

  1. Prepare the miso marinade by combining miso paste, mirin, soy sauce, rice vinegar, and sugar in a bowl. Mix well until all ingredients are incorporated.
  2. Place salmon fillets skin side down in a shallow dish and pour the miso marinade over them. Cover and refrigerate for 30 minutes to allow the flavors to infuse.
  3. Cook soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.
  4. Steam edamame in a steamer basket over boiling water for 3 4 minutes or until bright green and tender. Season with salt and pepper.
  5. In a large pan, heat vegetable oil over medium high heat. Carefully place the marinated salmon fillets skin side down in the pan and cook for 4 5 minutes per side or until cooked to desired doneness.
  6. To assemble, divide the cooked soba noodles among six plates. Top each with a salmon fillet, mixed vegetables, and edamame. Drizzle with remaining miso marinade and garnish with toasted sesame seeds.
