8 oz boneless, skinless chicken breasts
1 large red bell pepper
1 large green bell pepper
1 medium white onion
1 lime
4 corn tortillas (gluten
free)
1 ripe avocado
1/2 cup sour cream
1 cup fresh pineapple, chopped
1/4 cup cilantro, finely chopped
1 jalapeño pepper, seeded and minced
Salt and pepper to taste
Olive oil
Instructions
Prepare the marinade by combining the juice of one lime, a tablespoon of olive oil, salt, and pepper in a bowl.
Slice the chicken breasts into thin strips and marinate them for 30 minutes in the refrigerator.
Slice the red and green bell peppers and white onion into thin strips. Set aside.
In a separate bowl, mix the sour cream with the mashed avocado to create the avocado crema. Add salt and pepper to taste.
Grill the chicken strips over medium heat until cooked through. Remove from the grill and let them rest for a few minutes.
Grill the bell peppers, onion, and pineapple until they are tender and slightly charred. Let them cool slightly before chopping.
To make the salsa, combine the grilled fruits and vegetables with finely chopped cilantro, minced jalapeño, salt, and pepper in a bowl. Taste and adjust seasoning if necessary.
Warm the corn tortillas on the grill or in a dry pan for about 10 seconds per side.
Assemble the fajitas by placing a portion of marinated chicken, grilled vegetables, avocado crema, and salsa on each warm tortilla.
Fold the tortillas to create a taco shape and serve immediately. Enjoy your Michelin star Mexican lunch!
Chef’s Insight
The secret to this dish lies in marinating the chicken for just the right amount of time. This allows the flavors to soak in without overpowering the meat.
Notes
Make sure to use ripe avocados for a creamy and smooth avocado crema. - You can adjust the spice level by adding more or fewer jalapeños in the salsa.
