  • 1 lb ground lamb and beef blend
  • 2 cups gluten
  • free oatmeal
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 6 oz finely chopped mixed dried fruits (raisins, currants, apricots)
  • 3 oz shelled walnuts, coarsely chopped
  • 1/2 cup finely chopped fresh parsley
  • 2 tsp ground coriander
  • 2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1 cup gluten
  • free beef broth
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 2 quart pudding basin or baking dish.
  2. In a large bowl, combine the ground lamb and beef, oatmeal, onion, garlic, mixed fruits, walnuts, parsley, coriander, allspice, and cloves. Mix well to combine.
  3. Add the gluten free beef broth, salt, and pepper, and mix until evenly distributed.
  4. Transfer the mixture into the prepared baking dish, smoothing the top. Cover with aluminum foil. e) Bake for 1 hour and 30 minutes. Remove from oven, and let it rest for 15 minutes before serving.
