2 cups panko breadcrumbs
1 cup all
purpose flour
2 large eggs, beaten
Vegetable oil, for frying
1/2 cup unsalted dry

sodium soy sauce
3 tablespoons rice vinegar
2 tablespoons hoisin sauce
1 tablespoon sriracha
1 teaspoon Szechuan peppercorns, ground
1 teaspoon grated fresh ginger
2 cloves garlic, minced

Instructions
Press and drain the tofu cut into 1 inch cubes. Set up a breading station with flour, beaten eggs, and panko breadcrumbs in separate bowls. Dredge each tofu cube through the flour, then egg, and finally coat with panko. Repeat for all pieces. In a deep frying pan, heat 1 inch of vegetable oil to 350°F (180°C). Fry tofu until golden brown and crispy, about 2 minutes per side. Remove and drain on paper towels. For the sauce, blend peanuts, soy sauce, rice vinegar, hoisin sauce, sriracha, ground Szechuan peppercorns, ginger, and garlic until smooth. Drizzle sauce over crispy tofu bites and garnish with cilantro leaves. Serve immediately.
