Ingredients

  • 1 pack (400g) traditional Turkish simit bread, sliced into wedges
  • 2 cups fresh cherry tomatoes, halved
  • 1 large red onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 1 small cucumber, thinly sliced
  • 200g feta cheese, crumbled
  • 1 cup kashar cheese, grated

Instructions

  1. Preheat the oven to 350°F (175°C). Arrange sliced simit bread on a baking sheet and toast until golden brown, about 8 minutes. Remove from the oven and set aside.
  2. In a large bowl, toss cherry tomatoes, red onion, green bell pepper, red bell pepper, and cucumber with olive oil, salt, and pepper. Set aside to marinate for at least 15 minutes.
  3. Arrange the marinated vegetables on a large platter or individual plates. Top with crumbled feta cheese, grated kashar cheese, and black olives.
