Ingredients

  • 4 salmon fillets (6 oz each) 1 cup quinoa, uncooked 1 avocado, diced 1/2 cup red bell pepper, sliced 1/2 cup cucumber, thinly sliced 1/2 cup radish, thinly sliced 4 tbsp miso paste (white or yellow) 3 cups water or vegetable broth Fresh cilantro leaves, for garnish Salt and pepper, to taste

Instructions

  1. In a large saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and cook for 12 15 minutes until the quinoa is cooked and fluffy. Set aside.
  2. Season salmon fillets with salt and pepper, to taste. In a non stick skillet or grill pan over medium high heat, cook salmon for about 4 minutes on each side, or until cooked through and golden brown.
  3. Spread miso paste on the top of each salmon fillet to taste. Place salmon back onto the skillet or grill pan and cook for an additional 1 2 minutes on medium heat until the miso coating is melted and slightly caramelized.
  4. Divide cooked quinoa among four bowls, then top each with a salmon fillet, avocado, red bell pepper, cucumber, and radish. Garnish with fresh cilantro leaves.
