  • 1 cup fresh mango purée 2 cups cubed fresh mango 1/2 cup white rum 1/4 cup freshly squeezed lime juice 1/4 cup sugar 6 cardamom pods, crushed Fresh mint leaves, for garnish Soda water, to top up

Instructions

  1. In a saucepan over medium heat, combine mango purée, cubed mangoes, sugar and cardamom. Stir until the sugar dissolves completely. Simmer for 5 minutes, then remove from heat and let it cool.
  2. Once cooled, blend the mixture in a blender until smooth. Strain the mixture through a fine mesh strainer into a bowl, pressing the solids to extract as much liquid as possible. Discard the solids.
  3. In a cocktail shaker, combine 1/2 cup of the mango syrup with white rum and lime juice. Fill the shaker with ice and shake vigorously until well chilled.
  4. Divide the mixture between 6 glasses, filling each glass about two thirds full. Top up each glass with soda water to desired level. Garnish each glass with fresh mint leaves.
