  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint leaves, chopped
  • 2 tablespoons extra
  • virgin olive oil
  • 1 tablespoon honey
  • Zest and juice of one orange
  • Salt and pepper, to taste
  • Crusty bread or pita, for serving

Instructions

  1. In a large skillet over medium heat, combine the puréed tomatoes, paprika, cumin, coriander, sweet paprika, cinnamon, and cayenne pepper. Season with salt and freshly ground black pepper. Cook until the mixture thickens, about 10 minutes.
  2. Carefully crack the eggs into the skillet, spacing them evenly. Cover and cook over low heat for 6 8 minutes or until the whites are set and yolks reach your desired consistency. Season with salt and pepper.
  3. Grill the Moroccan spiced sausages according to package instructions or cook on the stovetop, turning frequently, until heated through. Remove from heat and let rest for a few minutes. Slice into bite sized pieces.
  4. In a large salad bowl, combine mixed greens, orange segments, red onion, parsley, and mint. Toss with olive oil, honey, orange zest, and juice, seasoning with salt and pepper to taste. e) To serve, divide the shakshuka among four plates, followed by a portion of sausages. Top each plate with a generous helping of the zesty orange salad. Enjoy with crusty bread or pita.
