In another bowl, mix melted coconut oil, brown sugar, and vanilla extract. Combine wet and dry ingredients fold in date mixture until well combined. Pour batter into prepared cake pan and bake for 30 35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan on wire rack before serving.
