Ingredients
- 1 cup almond flour
- 1/2 cup walnuts, chopped
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1 tbsp cinnamon
- 1 tsp cardamom
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 350°F (180°C). Line a 12 cup muffin tin with parchment paper liners.
- In a bowl, mix together the almond flour and chopped walnuts.
- Add melted coconut oil, honey, and spices (cinnamon, cardamom, ginger, and nutmeg) to the mixture. Stir well until fully combined.
- Divide the mixture evenly among the 12 muffin liners, pressing down gently to form the bases of the Baklava Bites.
- Sprinkle the chopped pecans on top of each bite.
- Bake for 15 20 minutes, or until golden brown and fragrant.
- Allow the Baklava Bites to cool in the tin for at least 15 minutes before removing.
- Serve with a dusting of cinnamon on top.
Chef’s Insight
This recipe is inspired by Moroccan Baklava but made Paleo-friendly using almond flour and coconut oil instead of traditional phyllo dough and butter.
Notes
For added flavor and crunch, consider adding a layer of chopped apricots or raisins to the mixture before baking.
