Instructions
In a large bowl, combine grated zucchinis, gluten free flour, mint, parsley, cumin, coriander, salt, and black pepper. Mix well.
Add eggs and optional feta cheese and Parmesan cheese to the mixture. Stir until fully combined.
Heat about 1 inch of vegetable oil in a deep frying pan over medium heat.
Using a cookie scoop or your hands, form small, round patties from the zucchini mixture and carefully drop them into the hot oil. Fry until golden brown on both sides, approximately 3 4 minutes per side. Remove from oil and place on paper towels to drain excess oil.
To prepare mint yogurt sauce, simply combine Greek yogurt, chopped mint, minced garlic, salt, and pepper in a small bowl. Mix well and chill until ready to serve.
Chef’s Insight
The contrast of textures between the crispy fritters and cool, creamy sauce creates a delightful culinary experience.
Notes
For a more authentic Moroccan flavor, consider adding a pinch of saffron or a dash of harissa to the zucchini mixture before frying.
