Ingredients

  • Chicken Skewers:
  • 1 lb boneless chicken breast
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • Salt and black pepper to taste Zucchini Fritters:
  • 3 medium zucchinis, grated
  • 1 large egg
  • 1/4 cup almond flour
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup Parmesan cheese, grated
  • Salt and black pepper to taste Shakshuka:
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste Garnish:
  • Fresh parsley, chopped
  • Parmesan cheese, grated

Instructions

  1. Prepare the chicken skewers by cutting the chicken into 1 inch cubes and thread onto skewers. In a small bowl, mix together the olive oil, paprika, cumin, coriander, salt, and black pepper. Coat the chicken skewers with the spice mixture and set aside to marinate for at least 30 minutes.
  2. Prepare the zucchini fritters by combining the grated zucchinis, egg, almond flour, parsley, Parmesan cheese, salt, and black pepper in a large bowl. Mix well and set aside.
  3. For the shakshuka, heat olive oil in a skillet over medium heat. Add the onion and bell pepper, cooking until softened. Stir in the garlic, tomatoes, tomato paste, paprika, cumin, salt, and black pepper. Simmer for 10 minutes, or until the sauce has thickened.
  4. Preheat a grill or grill pan to medium high heat. Grill the chicken skewers until cooked through, about 4 5 minutes per side. Set aside.
  5. In another pan, cook the zucchini fritters over medium heat for 2 3 minutes on each side until golden brown and cooked through.
  6. To serve, arrange the shakshuka in a shallow dish, placing the grilled chicken skewers and zucchini fritters around it. Garnish with fresh parsley and Parmesan cheese.
