Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and cook until softened, about 3 4 minutes.
  2. Stir in the garlic, cumin, smoked paprika, coriander, cinnamon, salt, and black pepper. Cook for another minute, allowing the spices to toast and fragrance the oil.
  3. Add the chopped tomatoes to the skillet and cook until they start to break down and release their juices, about 5 7 minutes.
  4. Reduce the heat to low and create four small wells in the tomato mixture, being careful not to disturb the sauce. Crack an egg into each well and season with salt and black pepper. Cover the skillet and cook for 6 8 minutes, or until the eggs are cooked to your desired level of doneness.
