Instructions

  3. Add chickpeas to the skillet with onion mixture, stirring well to combine. Cook for another 5 minutes, until chickpeas are heated through. Season with salt and pepper to taste.
  4. In a food processor, blend moringa leaves, cilantro, mint, lemon juice, olive oil, and cumin until smooth. Season with salt to taste.
  5. Gently fold the cooked quinoa into the chickpea mixture, stirring in raisins and pine nuts. Top with parsley.
