1. 2 cups of pitted Medjool dates, chopped 2. 1 cup of raw almonds, soaked for 3 hours and drained 3. 1/2 cup of almond milk 4. 1/2 cup of coconut oil, melted 5. 1 tablespoon of orange zest 6. 1 teaspoon of ground cinnamon 7. 1/4 teaspoon of ground ginger 8. A pinch of sea salt 9. 3/4 cup of shredded unsweetened coconut, for rolling
Instructions
In a food processor, blend the dates until they form a smooth paste. Set aside.
In another blender, blend the almonds into a fine powder. Gradually add the almond milk and continue to blend until you achieve a creamy consistency.
Pour the almond mixture into the date paste and mix well. Add the melted coconut oil, orange zest, cinnamon, ginger, and salt. Blend again until everything is combined.
Transfer the mixture into the refrigerator for 2 hours to set.
Once set, use a small ice cream scoop or your hands to form round balls, then roll them in the shredded coconut.
