  2. In a large pan, heat olive oil over medium heat. Add red onion and sauté until translucent.
  3. Add garlic, paprika, cumin, ginger, cinnamon, and cayenne pepper. Stir to combine and cook for 1 2 minutes.
  4. Add diced tomatoes, red bell pepper, and green bell pepper to the pan. Cook for another 5 minutes until vegetables are tender. Season with salt and pepper to taste.
  5. Gently fold in cooked couscous and stir well to combine. Remove from heat and let rest for a few minutes before serving.
  6. To serve, spoon the vegetable and couscous mixture onto individual plates, garnish with fresh parsley and mint leaves, and add a lemon wedge on the side.
