Ingredients

  • 4 large free
  • range eggs
  • 8 slices of bacon (preferably Australian)
  • 2 cups of mushrooms, sliced
  • 1 large ripe avocado, halved and pitted
  • 2 cups of cherry tomatoes, halved
  • 4 thick slices of sourdough bread
  • 100g of feta cheese, crumbled
  • 1/4 cup of fresh basil leaves
  • Salt and pepper, to taste

Instructions

  1. a. In a large non stick skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside on a paper towel lined plate. b. In the same skillet, add the mushrooms and cook until they release their juices and begin to brown. Season with salt and pepper to taste. Set aside. c. Lightly toast the sourdough slices. Rub each slice with half of the avocado, dividing it equally among the four slices. d. Top each piece of sourdough with mushrooms, cherry tomatoes, crumbled feta cheese, and bacon. Garnish with fresh basil leaves. Season with salt and pepper to taste.
