Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the seasonal vegetables in olive oil, rosemary, salt, and pepper. Spread them evenly on the prepared baking sheet and roast for 20 25 minutes until tender.
  3. While the vegetables are roasting, boil the baby potatoes in salted water until just tender. Drain and let cool slightly.
  4. Crush the garlic cloves using the flat side of a knife and sprinkle over the potatoes. Add butter and lemon zest, mashing until well combined. Season with salt and pepper to taste. Set aside.
