  1. a. In a large bowl, combine the chicken thighs with olive oil, chopped parsley, rosemary, thyme, and garlic powder. Season with salt and pepper to taste. Marinate for at least 30 minutes or up to overnight. b. Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper. Spread the carrots, broccoli, and cherry tomatoes on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 15 20 minutes or until vegetables are tender. c. Meanwhile, prepare the quinoa pilaf: In a medium saucepan, bring water or chicken broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 12 15 minutes or until quinoa is cooked and fluffy. Fluff with a fork and set aside. d. In a large skillet, heat olive oil over medium heat. Add the marinated chicken thighs, skin side down, and cook until browned on both sides. Transfer the skillet to the oven and bake for 15 20 minutes or until cooked through. e.
