Ingredients
4 large free
range eggs
1/2 cup cherry tomatoes, halved
1/2 cup baby spinach leaves
1/2 cup diced avocado
1/2 cup roasted bone broth (homemade or store
bought)
1/4 cup pepita seeds
1/4 cup chia seeds
1/4 cup fresh basil leaves, chopped
2 slices of sugar
free bacon (optional)
Salt and pepper, to taste
Instructions
Preheat a non stick frying pan over medium heat. Add the bacon slices and cook until crispy, then transfer them onto a paper towel lined plate.
In the same pan, crack the eggs and cook them to your desired preference (sunny side up or over easy). Season with salt and pepper.
Place cherry tomatoes in a microwave safe bowl, pour 1/4 cup of roasted bone broth over them, and cover with a microwave safe plate. Microwave for 1 minute until they are heated through.
Assemble the breakfast bowl: Start with a bed of baby spinach leaves, followed by the bacon slices (if using), avocado, cherry tomatoes with roasted bone broth, and eggs.
Sprinkle pepita seeds and chia seeds over the top, garnish with fresh basil leaves, and serve immediately.
