  • 2 cups cooked ful medames (fava beans) 1 cup cherry tomatoes, halved 2 tbsp olive oil Salt and black pepper to taste 6 large eggs 1/2 cup chopped parsley 1/4 cup chopped cilantro 1/4 cup lemon juice 2 cloves garlic, minced 1/2 tsp ground cumin Spicy Schug: 3 cups packed fresh cilantro leaves 1 cup packed fresh mint leaves 2 cloves garlic, minced 2 jalapenos, seeded and chopped 1/4 cup lemon juice Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together cooked ful medames, cherry tomatoes, olive oil, salt, and black pepper.
  3. Transfer the mixture into an oven safe dish and bake for 20 minutes or until heated through.
  4. In another bowl, combine all spicy schug ingredients and blend until smooth. Season with salt to taste.
  5. Heat a non stick skillet over medium heat. Add a teaspoon of olive oil and crack each egg into the skillet. Cook for 3 minutes or until the whites are set and the yolks reach your desired doneness.
  6. Top the ful medames with the spicy schug, chopped parsley, cilantro, lemon juice, and ground cumin. Add a fried egg on top of each portion.
