1 whole rack of lamb (8 ribs)
6 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cups assorted seasonal vegetables (e.g., carrots, zucchini, bell peppers)
2 cups cherry tomatoes
1 cup red wine vinegar
2 tablespoons honey
Instructions
Preheat oven to 400°F (200°C).
In a small bowl, combine garlic, rosemary, thyme, Dijon mustard, salt, and black pepper. Mix well.
Trim excess fat from the lamb rack. Rub the lamb with olive oil and then apply the herb mixture evenly over the surface.
Place the seasoned lamb rack on a wire rack in a roasting pan. Roast for 20 25 minutes or until an internal temperature of 135°F (57°C) is reached for medium rare, then let it rest for 10 minutes.
Toss vegetables and cherry tomatoes with red wine vinegar and honey. Spread them on a separate baking sheet and roast at the same oven temperature for 20 25 minutes or until tender.
Slice the lamb into individual chops and serve alongside the roasted vegetables for an unforgettable meal.
