Mouthwatering Gluten-Free Chinese Lunch: Sizzling Shrimp with Garlic Sauce and Cauliflower Fried Rice

Cauliflower Fried Rice (see recipe below) Cauliflower Fried Rice:
1 large head of cauliflower, grated into rice
sized pieces
2 tablespoons gluten
free soy sauce
2 cloves garlic, minced
1/4 cup green onions, chopped
Salt and pepper, to taste
Instructions
In a small bowl, combine shrimp, garlic, gluten free soy sauce, rice vinegar, sesame oil, cornstarch, salt, and pepper. Mix well and set aside to marinate for 15 minutes.
While the shrimp is marinating, prepare the Cauliflower Fried Rice. In a large skillet or wok, heat vegetable oil over medium high heat. Add garlic and cook until fragrant, about 30 seconds.
Add grated cauliflower to the skillet and stir fry for 5 minutes or until tender and golden brown. Season with gluten free soy sauce, green onions, salt, and pepper. Remove from heat and set aside.
In another skillet or wok, heat a small amount of oil over high heat. Add marinated shrimp in a single layer and cook for 1 2 minutes per side until cooked through.
Serve the Sizzling Shrimp with Garlic Sauce on top of the Cauliflower Fried Rice, garnished with additional green onions if desired.
