  • 2 cups fresh asparagus, trimmed and cut into 1

  • 1/2 cup shredded mozzarella cheese or dairy

  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.
  3. Heat the olive oil in an oven safe non stick skillet over medium heat. Add the asparagus pieces and cook for 3 minutes, or until slightly tender.
  4. Add the chopped prosciutto to the skillet with the asparagus and cook for an additional 2 minutes.
  5. Pour the egg mixture into the skillet, evenly distributing it over the asparagus and prosciutto. Sprinkle the shredded mozzarella cheese evenly on top.
  6. Transfer the skillet to the preheated oven and bake for 12 15 minutes, or until the frittata is set and golden brown.
  7. Remove from the oven and allow it to rest for a few minutes before slicing into two servings.
