8 large eggs 1 cup black beans, canned or cooked 1 cup diced tomatoes, fresh or canned 1 cup shredded cheddar cheese, gluten
free 1/2 cup cooked chorizo sausage, gluten
free 1/2 cup corn kernels, fresh or frozen 1 small red onion, diced 1 medium bell pepper, diced (green or red) 1 jalapeño, seeded and minced (optional) 2 cloves garlic, minced 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/2 teaspoon smoked paprika 1/4 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon olive oil Fresh cilantro, for garnish
Instructions
In a large skillet, heat the olive oil over medium high heat. Add the onion, bell pepper, jalapeño, and garlic to the skillet. Cook until softened and fragrant, about 3 4 minutes.
Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well, and cook for another minute to allow the spices to toast.
Add the diced tomatoes, black beans, corn, and cooked chorizo to the skillet, stirring gently to combine all ingredients. Cook for 2 3 minutes until heated through.
In a separate bowl, whisk together the eggs until fully combined. Pour the eggs over the vegetable and meat mixture in the skillet. Gently stir to distribute the eggs evenly throughout the skillet, without overmixing.
Cook for 2 3 minutes undisturbed, then gently lift the edges of the egg mixture with a spatula to allow any uncooked egg to flow beneath. Continue cooking until the eggs are set and lightly golden, approximately 5 7 minutes.
Sprinkle the shredded cheddar cheese over the top of the skillet. Cover with a lid or aluminum foil and let it sit for 1 2 minutes, until the cheese is melted and gooey.
Garnish with fresh cilantro leaves before serving.
