Ingredients

  • 12 oz extra
  • firm tofu
  • 1 cup short
  • grain brown rice
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, mushrooms)
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 2 tbsp vegetable broth
  • 1 tbsp lemon juice
  • 1 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Begin by preparing the tofu steaks by draining and pressing the tofu to remove excess moisture. Slice into 6 equal pieces. In a shallow dish, combine soy sauce, vegetable broth, lemon juice, ground ginger, salt, and pepper. Add tofu steaks and marinate for 20 minutes. While the tofu is marinating, cook brown rice according to package instructions. Set aside. In a large pan, heat sesame oil over medium high heat. Sear the tofu steaks until golden brown on both sides, approximately 3 4 minutes per side. Remove from pan and set aside. Stir fry mixed vegetables in the same pan with a bit more sesame oil, adding salt and pepper to taste. Cook for about 5 minutes or until tender. To serve, place a tofu steak on top of a bed of cooked brown rice and surround with stir fried vegetables.
