  • 1 lb beef sirloin, thinly sliced into 1

  • 8 wooden skewers For the Marinade:
  • 3 tbsp coconut milk
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and black pepper, to taste For the Peanut Sauce:
  • 1 cup unsalted peanuts, roasted and roughly chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup coconut milk
  • 1/4 cup water
  • 1/4 cup fresh lime juice
  • 2 tbsp tamari or soy sauce
  • 2 tbsp palm sugar, packed
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine beef strips with marinade ingredients. Mix well and let marinate for at least 30 minutes in the refrigerator.
  2. While the beef is marinating, prepare the peanut sauce by combining all ingredients in a blender or food processor. Blend until smooth, then set aside.
  3. Preheat grill or broiler to medium high heat. Thread marinated beef onto wooden skewers, leaving some space between each piece.
  4. Grill or broil the skewers for 2 3 minutes per side, or until desired doneness is reached.
  5. Serve immediately with peanut sauce for dipping, garnished with fresh cilantro leaves and lime wedges.
