  • purpose flour
  • 1/2 cup black
  • eyed peas, soaked overnight and drained
  • 1 teaspoon Suya spice mix
  • 1/4 cup cornstarch
  • 1 egg
  • Salt and pepper, to taste
  • Vegetable oil for frying
  • Bamboo skewers

  1. Cut the beef into cubes and thread onto bamboo skewers. In a bowl, combine Suya spice mix, cornstarch, salt, and pepper. Dredge the beef cubes in this mixture and set aside. For the puff puff, whisk egg with water, gradually add flour, and mix until smooth. Add water as needed to achieve desired consistency. Spoon small amounts of batter into hot oil and fry until golden brown. Remove and drain on paper towels. Prepare akara by mixing black eyed peas, flour, salt, and pepper in a blender until smooth. Fry spoonfuls of the mixture in hot oil until crispy and golden brown. Grill or pan fry beef skewers until cooked through. Steam moi moi in a steamer for 20 minutes.
